4 boneless, skinless, chicken breasts
1 C cornflakes, crushed
3/4 C parmesan cheese, grated
1/3 C unsalted butter, melted
2 Tbsp dry ranch seasoning mix (see my homemade ranch mix in Dips)
Preheat oven to 375 F degrees. Lightly grease a 9x13 baking dish with non-stick cooking spray.
In a large, re-sealable Zip-lock bag, mix corn flakes, parmesan cheese, and ranch mix.
Seal bag and shake to combine.
Pour melted butter into a shallow dish. Dip each chicken breast until thoroughly covered with butter.
Place each chicken breast, one at a time, in corn flake bag.
Seal and shake until chicken is completely coated.
Repeat with remaining chicken.
Transfer to baking dish.
Sprinkle remaining cornflake mixture over the tops of chicken.
Bake for 40-45 minutes, or until chicken is cooked through.
