12 oz. uncooked ziti pasta
4 oz. pancetta or bacon, diced
1 large onion, chopped
3 cloves garlic, chopped
1 lb ground Italian sausage
1 C dry red wine
1 28 oz. can crushed tomatoes
1/2 C firmly packed torn fresh basil
1/2 tsp kosher salt
1/2 tsp dried crushed red pepper
1 C ricotta cheese
8 oz. mozzarella cheese, shredded, divided
non-stick cooking spray
1/2 C grated Parmesan cheese
Preheat oven to 350 F degrees. Prepare ziti, al dente, according to package directions.
Cook pancetta in a large skillet, over medium-high heat. Add onion and garlic. Sauté 3 minutes, or until onion is tender. Add sausage. Sauté 5 minutes, or until meat is no longer pink.
Add wine. Cook 3 minutes. Stir in tomatoes, basil, salt, and red pepper. Reduce heat to low. Cook, stirring occasionally, 3 minutes.
Stir ricotta and 1 cup mozzarella into cooked pasta.
Lightly grease a 9x13 baking dish with cooking spray. Transfer pasta mixture to dish. Top with sausage mixture.
Sprinkle with Parmesan cheese and remaining 1 C mozzarella cheese.
Bake for 25 to 30 minutes or until bubbly.
