12 lasagna noodles
6 C mashed potatoes
2 sweet onions, thinly sliced
2 C cheddar cheese, grated
1/2 C (1 stick) butter
salt and pepper, to taste
Preheat oven to 375 F degrees. Grease a 9x13 baking dish with butter or non-stick cooking spray.
Cook lasagna noodles according to package directions, and set aside.
In a large skillet, over medium heat, add butter, salt, pepper, and onion. Sauté until soft.
Place 4 lasagna noodles, in an even layer, on bottom of baking dish.
Layer 1/2 of mashed potatoes on top of noodles, followed by 1/2 of the sautéed onions, and 1/2 C of cheese.
Repeat with another layer of noodles, remaining mashed potatoes, sautéed onions, and 1/2 C cheese.
Top lasagna with remaining 4 noodles and 1 C cheese.
Bake for 30 minutes, or until hot and bubbly.
