3 C baby spinach
8 slices bacon, cooked and crumbled
8 oz. cream cheese, softened
1 C sour cream
1 C sharp cheddar cheese, grated, divided
3/4 C mozzarella cheese, grated
1/2 C parmesan cheese, grated
2 Tbsp mayonnaise
2 Tbsp extra-virgin olive oil
1/2 Tbsp lemon juice
kosher salt and freshly ground pepper, to taste
Preheat oven to 400 F degrees. Lightly grease an 8x8 or 9x9 baking dish with butter or non-stick cooking spray.
Heat olive oil, in a medium skillet, over medium high heat. Sauté spinach until just wilted.
Season with salt, pepper, and lemon juice. Drain cooking liquid and set aside.
Combine cream cheese, sour cream, 3/4 C cheddar cheese, mozzarella, parmesan, and mayonnaise, in a large bowl. Mix Well.
Stir in spinach and 3/4 crumbled bacon bits. Season with salt and pepper. Stir until combined.
Transfer to baking dish. Top with remaining cheddar cheese and bacon crumbles.
Bake for 20-22 minutes, or until golden brown and bubbly.
Serve with toasted baguette, or fresh veggies.
