2 C brown rice, cooked
2 C chicken, cooked and shredded
2 10 oz. pkg broccoli florets, frozen
1 can cream of chicken soup
1/2 C mayonnaise
1 tsp lemon juice
1/2 tsp curry powder
1 C cheddar cheese, shredded
Preheat oven to 350 F degrees. Lightly grease a 9x13 baking dish.
Spread rice across bottom of dish. Top with alternating layers of broccoli and chicken.
In a large bowl, combine soup, mayonnaise, lemon juice, and curry powder. Mix together until smooth.
Pour mixture over chicken and broccoli. Sprinkle cheddar cheese over the top.
Bake for 20-30 minutes, or until cheese is melted, and sauce is bubbly.
