3 C grilled chicken, diced or cut into strips
2 C penne pasta
2 C kale, rinsed, ribs removed, chopped
2 C garlic croutons
1 C cherry tomatoes, halved
1 C mozzarella
1/2 C parmesan cheese, grated
1/2 C chicken broth
1/2-2/3 C Caesar salad dressing
1 Tbsp extra-virgin olive oil
kosher salt and pepper, to taste
bacon bits, to taste
Preheat oven to 350 F degrees. Bring a large pot of salted water to boil.
Cook pasta according to package directions, until just al dente. Drain and set aside.
In a large bowl, combine chicken, pasta, kale, mozzarella, chicken broth, and Caesar dressing.
Season generously with salt and pepper.
In a small bowl, coat cherry tomatoes with olive oil. Season with salt and pepper.
Transfer chicken/kale mixture to a 9x13 baking dish. Top with cherry tomatoes and croutons.
Sprinkle parmesan cheese and bacon bits over the top.
Bake for 20 minutes, or until cheese is hot and bubbly.
Cool for 5 minutes before serving.
