3 C chicken, cooked, chopped into 1/4 inch cubes or shredded
1/2 C celery, chopped
1/4 C red onion, chopped
1/4 C carrots, diced
1/2 C mayonnaise or plain Greek yogurt
1/2 tsp salt
1/4 tsp pepper
pinch of paprika
6 croissants, cut in half horizontally
lettuce, as needed
your favorite toppings (optional)
Preheat oven to 350 F degrees.
Rub chicken with olive oil, salt, and pepper.
Bake for 35-40 minutes, or until chicken is fully cooked.
Combine all veggies in a large bowl.
Add chicken, mayo (or yogurt), salt, pepper, and paprika. Mix well.
Cover and refrigerate for 1-2 hours.
Serve on a croissant, hamburger bun, or bulky roll. Top with your favorite toppings.
