Dark's Kitchen
Ingredients:
Serves 12

1 1/2 C all-purpose flour
1 1/2 C quinoa, cooked
1 C oats
1 C semi-sweet chocolate chunks or chips, or dark chocolate
2/3 C coconut oil, melted
2/3 C brown sugar
1/3 C sugar
1/2 C plain Greek yogurt
1/3 C shredded coconut
2 large eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Directions:

Preheat oven to 350 F degrees. Lightly grease a 9x13 baking dish with butter or non-stick spray.

Whisk flour, oats, baking powder, baking soda, and salt, in a medium bowl. Set aside.

In a large bowl or mixer, beat coconut oil and Greek yogurt, until combined.

Mix in sugars.

One at a time, beat in eggs (waiting 'til each is fully incorporated before adding the next).

Mix in vanilla extract.

Stir in quinoa.

Add half of dry ingredients. Stir until just combined. Add remaining dry ingredients. Again, mix until just combined.

Fold in chocolate chunks and coconut. Pour mixture into baking dish.

Bake for 25-30 minutes, or until edges are brown and pulling away from the sides of the dish. The center will be slightly soft.

Let cool 15 minutes before cutting into squares.
