1 cauliflower, cut into florets
1 C all-purpose flour
2 C Panko breadcrumbs
3 large eggs, beaten
freshly ground black pepper
1 C barbecue sauce
1/2 C brown sugar
juice of 2 limes
1 tsp garlic powder
2 Tbsp water
Preheat oven to 375 F degrees.
In a large bowl, combine flour and cauliflower.
Mix until fully coated.
In one bowl, add panko breadcrumbs. In another bowl, whisk eggs and water.
Dip cauliflower in eggs, then breadcrumbs, until fully coated.
Transfer to a parchment-lined baking sheet and season generously with salt and pepper.
Bake for 20-25 minutes, or until golden and crispy.
In a small saucepan, over low heat, warm barbecue sauce, brown sugar, lime juice, and garlic powder.
Pour over cauliflower.
