1 large egg
1/2 C light brown sugar, packed
1/4 C vegetable oil
1/4 C honey Greek yogurt (plain, or sour cream, if you prefer)
2 tsp vanilla extract
2 large bananas mashed (1 C)
1 C bread flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large egg
6 oz. cream cheese
1/3 C sugar
2 1/2 Tbsp all-purpose flour


Preheat oven to 350 F degrees. Spray a 9x5 loaf pan with non-stick cooking spray,
flour, and set aside.

In a large bowl, mix egg, cream cheese, sugar, and 2 1/2 Tbsp flour, using a hand mixer
or whisk. Set aside.

In another large bowl, mix egg, sugar, oil, yogurt, and vanilla, until smooth. Add bananas. Stir to incorporate.

In a small bowl, mix flour, baking powder, baking soda, and salt. Fold dry mix into wet, until just combined. Do not over mix.

Place 2/3 of bread mixture into loaf pan. Put filling mixture over top. Top with remaining bread mix.

Bake for 50 minutes, or until top is golden, and center is set.

If top is browning too fast, and center is not set, tent with foil.

Allow to cool, in pan, for 10-15 minutes before turning out on a cooling rack.
