10 C (1 large loaf) day-old Brioche, cut into cubes
8 eggs, lightly beaten
1 1/4 C milk
3/4 C heavy cream
1/2 C maple syrup
1/2 C (1 stick) unsalted butter, melted
1/4 C brown sugar
8 oz. cream cheese, softened, cut into cubes
1 Tbsp cinnamon
1 tsp pure vanilla extract
Maple syrup, to taste
1/4 tsp salt
Preheat oven to 350 F degrees.
Lightly grease a 9x13 baking dish.
In a large bowl, whisk eggs, milk, cream, maple syrup, brown sugar, cinnamon, vanilla extract, and salt.
Beat in melted butter and whisk another 2 minutes.
Drop bread cubes into egg mixture. Press them down so they're completely coated and absorb the liquid.
Spread 1/2 the bread chunks in an even layer across the baking dish. Sprinkle cubed cream cheese evenly across the bread.
Top with remaining bread and cubed cream cheese.
Cover with aluminum foil.
Bake for 35-45 minutes, or until cooked through and golden.
Garnish with maple syrup and serve.
