1 pkg lemon cake mix
1/3 C vegetable oil
1 8 oz. cream cheese
1 Tbsp lemon juice
1 C sugar
Preheat oven to 350 F degrees.
Combine cake mix, vegetable oil, and 1 egg until crumbly.
Reserve one C of crumble mixture. Set aside.
Spread remainder of crumbs in a 9x13 baking dish. Pat down to form a crust.
Bake for 10 minutes, or until crust is lightly golden brown.
In a medium bowl, beat cream cheese, lemon juice, remaining egg, and sugar. Whip until fluffy and light.
Spread over baked crumb mixture. Crumble the reserved C of crumbs over the top.
Return to oven and bake for 25 minutes.
