2-2 1/2 lb Yukon gold potatoes, peeled and chopped
1 red onion, chopped
1/3 C cider vinegar
1/4 C fresh parsley or dill, chopped
2 1/2 Tbsp whole grain mustard
1 1/2 Tbsp all-purpose flour
1/2 tsp salt
1/4 tsp freshly ground pepper
In a small bowl, whisk together mustard and flour until combined. Stir in cider vinegar.
Place potatoes and onions in crock pot. Pour mustard/vinegar mixture over the top.
Season with salt and pepper and stir well.
Cook on low for 5-6 hours, or until potatoes are fork tender.
Stir in fresh parsley or dill before serving.
