Dark's Kitchen
Serves 4

1/4 C extra virgin olive oil
2 Tbsp lemon juice
1 clove garlic, minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
3 tomatoes, cut into wedges
1/4 red onion, sliced
1/2 green pepper, sliced into strips
1/2 yellow pepper, sliced into strips
4 oz. feta cheese, cubed
10 Kalamata olives, pitted, halved
6 green olives, pitted, halved
1 small romaine lettuce, rinsed, dried, and chopped into bite-size pieces


In a small bowl, whisk olive oil, lemon juice, garlic, salt, pepper, and oregano, until well combined.

Place lettuce, tomatoes, peppers, olives, and feta into a large bowl.

Pour dressing over salad.

Toss gently to combine.
