4 C cooked rice, white or brown
1 1/2 C frozen mixed veggies (peas, carrots, corn, etc.)
2 eggs, whisked
1/2 C green onions, finely chopped
1/3 C soy sauce
1 Tbsp oil, vegetable or peanut
1 Tbsp minced garlic
1/2 Tbsp onion powder
1 tsp chili powder
1/2 tsp ground ginger
In a large skillet, add oil and veggies. Sauté over medium heat, until just cooked.
Slide veggie mix to one side of pan and add whisked eggs to the other half. Cook for 2 minutes, then scramble and combine with veggie mixture.
Add rice, soy sauce, garlic, onion powder, chili powder, and ground ginger, to skillet.
Stir well and cook over medium-high heat until browned.
Remove from heat and stir in green onions.
