1 Tbsp olive oil
2 C onion, diced
1 lb mild Italian sausage
2-3 cloves garlic, minced
3/4 C chicken broth
1 14 1/2 oz. can petite diced tomatoes
1/2 C heavy cream
9 oz. tortellini
1 tsp salt
1/2 tsp pepper
Heat olive oil in a large skillet, over medium heat. Add onions. Remove casing from sausage
and add to skillet.
Break sausage into bite-sized pieces. Increase heat to medium-high.
Cook, stirring occasionally, until sausage is browned.
Reduce heat to low. Add garlic and stir until fragrant, about 30 seconds.
Add broth, tomatoes, cream, and tortellini to the skillet. Stir to combine. Increase heat and bring to a boil.
Cover and reduce heat. Simmer for 15 minutes, until tortellini are tender, and heated through.
Add salt and pepper. Stir to combine.
