Dark's Kitchen

1 tsp olive oil
1 medium onion, diced
3 garlic cloves, minced
1 red pepper, diced
1 lb lean ground beef or turkey
1 8-10 oz. jar salsa, brand of your choice
1 25 oz. can diced fire roasted tomatoes
1 packet taco seasoning mix (see my homemade taco seasoning in Misc recipes)
1 can black beans
1 can kidney beans
1 10 oz. pkg frozen mixed vegetables
3-4 C chicken stock, (32 oz.)
2 Tbsp lime juice


Heat olive oil in a large stock pot. Add and sauté, onion, garlic, and red pepper until softened and lightly browned.

Add meat and cook until well browned.

Add salsa, tomatoes, taco seasoning, beans, and veggies.

Add enough chicken broth for soup consistency.

Bring to a boil, reduce heat, and simmer for 15 minutes.

Just before serving add lime juice.
