2 sheets (1 box) frozen puff pastry, thawed
1 C cream cheese, softened
1/2 C cottage cheese
1/2 C sugar
2 large eggs, divided
1 tsp vanilla extract
powdered sugar, garnish
1 Tbsp water
Preheat oven to 400 F degrees. Line 2 baking sheets with parchment paper.
Place cottage cheese in a cheesecloth or strainer and wring out excess moisture (or drain cottage cheese and pat dry with paper towels).
In a large bowl or mixer, beat cottage cheese and cream cheese until almost smooth. Mix in sugar, 1 egg, and vanilla. Mix until just incorporated.
Unfold puff pastry sheets. Cut each into 9 squares.
Spoon 1-2 Tbsp cheese mixture onto each square. Pull both sets of opposite corners up and over the filling, pressing together to seal.
Transfer to baking sheets.
In a small bowl, whisk remaining egg with water.
Brush egg wash over each Danish.
Bake for 20 minutes, or until puffed up and golden brown.
Top with powdered sugar and serve warm.
