Yield: 20-25 bites
1 C old-fashioned oats
2/3 C toasted, unsweetened, coconut flakes
1/2 C peanut butter
1/2 C ground flax seed
1/2 C chocolate chips or cacao nibs
1/3 C honey
1 Tbsp chia seeds
1 tsp vanilla extract
Combine all ingredients in a medium bowl.
Cover and chill in the fridge for half an hour.
Once chilled, roll into donut hole sized balls.
Store in an airtight container and keep refrigerated.
