2 C Oreo cookies, center filling removed (or 1 store-bought Oreo cookie pie shell)
2 C whipped cream, plus extra for garnish
1 7 oz. jar marshmallow fluff
2 Tbsp unsalted butter, melted
1 tsp mint extract
3-5 drops green food coloring
Place Oreo cookies in food processor, drizzle in melted butter, and pulse until coarsely ground.
Firmly mold ground cookies into pie dish, forming a pie shell.
In a large bowl or mixer, place marshmallow fluff, mint extract, and green food coloring, to desired color.
Mix until smooth.
Fold in whipped cream until just combined.
Pour into pie shell.
Refrigerate for 2 hours. Garnish with whipped cream and chocolate shavings before serving.
