Yield: 18 cookies
1/2 C butter, softened
2/3 C light brown sugar, packed
1 large egg
1/2 tsp vanilla extract
3/4 C all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 1/2 C rolled oats
3/4 C raisins
Preheat oven to 350 F degrees.
In a large bowl, cream butter, sugar, egg, and vanilla.
In a separate bowl, combine flour, baking soda, cinnamon, salt, and nutmeg.
Mix flour mixture into butter mixture.
Stir in oats and raisins, until well incorporated.
Line a baking sheet with parchment or wax paper.
Scoop dough into even balls and place on parchment paper, about two inches apart.
Bake for 10 to 12 minutes, or until golden around the edges.
Cool on baking sheet for 5 minutes before transferring to a cooling rack.
