Dark's Kitchen
Ingredients:

1 lb raw sugar (also known as demerara sugar, turbinado sugar, natural brown, or light brown
sugar)
3/4 C water
1 pinch cream of tartar OR 1 tsp white vinegar
4 oz. butter
4 Tbsp cream

Directions;

Cover a baking sheet with foil and lightly spray with non-stick cooking spray.

Heat sugar and water, over low heat, until dissolved. Bring to a boil.

Stir in a pinch of cream of tartar or a tsp of white vinegar.

Heat until hard crack stage, which is 302 F degrees.

When it reaches hard crack stage, stir in butter and cream.

Pour quickly 0nto baking sheet.

Cool until it starts to set, then score deep lines where you want it to break.

Cool overnight and break into squares.
