1 Tbsp extra-virgin olive oil
1 lb boneless, skinless chicken breast
3 cloves garlic, Chopped
1 15 oz. can crushed tomatoes
1/2 tsp crushed red pepper flakes
1 Tbsp chopped parsley, plus more for serving
1 C shredded mozzarella
1/4 C mini or regular pepperoni
Preheat oven to 350 F degrees.
In a large skillet, over medium-high heat, heat oil. Add chicken and sear until golden. Approx. 2 minutes per side. Transfer to a plate.
Reduce heat to medium-low and add garlic to skillet.
Cook until fragrant, 1 minute.
Add crushed tomatoes, crushed red pepper flakes, and parsley.
Bring to a simmer and let cook 5 minutes.
Transfer everything to a baking dish. Top chicken with mozzarella and pepperoni. Bake until chicken is cooked through, approx. 15 minutes.
Broil for last 2 minutes if you want a more golden cheese.
Garnish with parsley.
