1 head cauliflower
1 Tbsp vegetable oil
1/2 tsp salt
2 Tbsp olive oil
2 Tbsp lemon juice
2 Tbsp fresh cilantro, finely chopped
2 Tbsp chili powder
3 tsp cumin
2 Tbsp Dijon mustard
Preheat oven to 450 F degrees.
Cut leaves from around the cauliflower. Cut out the center core, creating a flat surface, and making sure to leave the head intact.
Rub vegetable oil over cauliflower and season generously with salt.
Transfer to a baking sheet or pie dish. Roast for 45 minutes, or until fork tender.
In a small bowl, combine olive oil, lemon juice, Dijon mustard, chili powder, and cumin. Set aside.
Remove cauliflower from oven and brush olive oil mixture all over.
Let mixture soak into the surface for 5 minutes.
Sprinkle with chopped cilantro. Cut into four pieces and serve.
