1 3/4 C all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 C light brown sugar
3 large over-ripe bananas, mashed
1 C fresh strawberries, sliced
2 large eggs
1 tsp vanilla extract
1/2 C plain Greek yogurt
Preheat oven to 350 F degrees. Grease the bottom only of a 9x5 loaf pan.
In large bowl, mix flour, baking powder, baking soda, and salt. Set aside.
In another large bowl, combine brown sugar, bananas, strawberries, eggs, vanilla extract, and yogurt. Mix well.
Pour dry ingredients slowly into wet ingredients. Mix until well blended.
Pour mixture into loaf pan.
Bake for 45-50 minutes, or until golden brown, and a toothpick inserted in center comes out clean.
