3 C fresh strawberries, chopped into medium-small pieces
1/2 C sugar
1 1/2 C all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 tsp vanilla
1 stick butter
1/3 C white sugar
2 tsp cornstarch
Preheat oven to 375 F degrees. Grease an 8x8 baking dish.
In a medium bowl, combine sugar, flour, baking powder, and salt.
In a small bowl, beat egg. Add vanilla. Combine with flour mixture.
Using a fork or a pastry cutter, cut butter into flour mixture until the pieces are very small.
Spread half of dough evenly into bottom of prepared pan.
In another bowl, combine sugar and cornstarch. Stir in strawberries.
Spoon evenly over crust.
Crumble remaining dough over strawberry layer.
Bake for 45 minutes, or until top is lightly golden brown.
Cool completely before cutting into squares.
