Serves 6-8

12 no-boil lasagna noodles
1 lb lean ground beef
1 egg
1 3/4 C ricotta cheese
4 C cheddar cheese, grated
3 C chunky salsa
2 Tbsp taco seasoning
1 Tbsp green onions, chopped
sour cream


Preheat oven to 350 F degrees. Lightly grease a 9x13 baking dish.

Brown beef in a large skillet. drain, and stir in taco seasoning. Set aside.

In a medium bowl, mix egg and ricotta cheese, until well combined. Set aside.

Place 4 noodles in bottom of baking dish.

Spread 1/3 of ricotta over noodles.

Spoon 1/3 of ground beef mixture over ricotta.

Spread 1/3 of salsa over beef.

Spread 1/3 of cheddar over beef.

Repeat steps, finishing with cheddar cheese.

Cover with foil and bake for 30-40 minutes, or until heated through.

Top with sour cream.
