4 small zucchini
1 Tbsp salt
1 tsp garlic powder
2 tsp basil
1 tsp red pepper flakes
3 Tbsp parsley
6 Tbsp olive oil
4 oz. cheddar cheese, shredded
Preheat oven to 350 F degrees.
Peel and dice onion. Dice tomatoes.
Slice zucchini and mushrooms.
Layer half the vegetables in an 8x8 baking dish.
Sprinkle with salt, garlic, basil, red pepper flakes, and parsley.
Pour olive oil over the top.
Sprinkle on half of cheddar cheese.
Add remaining vegetables.
Bake for 20 minutes.
Sprinkle the remaining cheddar cheese over the top.
Bake for another 15 minutes, or until veggies are tender.
