2 Smart Ones® Crustless Chicken Pot Pie entrées
2 4 oz. pkg frozen Asian stir-fry vegetables
1/2 C light coconut milk ***
2 8 oz. pkg shirataki noodles
Juice of 1 lime
1/4 C chopped peanuts
1/4 C chopped cilantro


Place pot pies in a medium saucepan or large skillet and heat over medium heat until defrosted, stirring occasionally.

Add vegetables and coconut milk. Stir to combine. Cover and simmer until vegetables are cooked, about 10 minutes.

Rinse noodles according to package directions and add to chicken mixture. Gently stir to combine.

Remove from heat and stir in lime juice.

Ladle into large soup bowls, garnishing with nuts and cilantro.

*** Extra coconut milk can be frozen and saved for another use.
