2 pkg Smart Ones® Chicken Quesadillas – 3 quesadillas needed
1/2 C canned black beans, drained and rinsed
1/2 C canned diced tomatoes, drained
1/2 C yellow corn, frozen
1 Tbsp garlic, minced
2 Tbsp chili powder
cooking spray
1 C low-fat Mexican style shredded cheese, divided


Preheat oven to 350 F degrees.

Remove quesadillas from package. Wrap each in a damp paper towel. Microwave until thawed, but not fully cooked (about 50 seconds each).

Scoop filling from each quesadilla into a medium bowl.

Set tortillas aside.

Mix filling with black beans, tomatoes, corn, garlic, and chili powder.

Lightly coat an 8x8 baking dish with cooking spray. Place one tortilla on the bottom. Top with half of filling mixture and 1/3 C of shredded cheese.

Add a second tortilla, remainder of filling and another 1/3 C of cheese.

Top with final tortilla and remaining 1/3 C cheese.

Cover and bake for 20 to 25 minutes or until cheese is bubbly.
