Serves 4, 1 1/2 C per serving
1 lb turkey sausage, hot-Italian style
1 15 oz. can pinto beans, undrained
1 14 1/2 oz. can diced tomatoes, with chilies, undrained
1 14 1/2 oz. can diced tomatoes, with garlic and onions, undrained
1 medium onion, chopped
1/4 tsp salt
1/4 tsp black pepper
Remove sausage from casing and place in 4 quart or larger crock pot. Break up with a spoon.
Add beans, both cans diced tomatoes, with juice, and onion. Stir to combine.
Cook on low for 5-6 hours.
Stir in salt and pepper.
