Dark's Kitchen
Serves 6, 1 1/2 C per serving

1 small onion, chopped
1 clove garlic, minced
1 large zucchini, diced
1 lb lean beef round, cut into 1 inch chunks
1/2 tsp dried oregano, crushed
1 14 1/2 oz. can diced tomatoes, undrained
1 Tbsp tomato paste
3/4 C dry lentils
4 C beef broth
1 tsp table salt
1/4 tsp black pepper
1/4 C basil, fresh, slivered


Place onion, garlic, zucchini, beef, oregano, tomatoes, tomato paste, lentils, beef broth, salt, and pepper, in a 5 quart or larger crock pot.

stir well.

Cook on low for 6 to 7 hours.

Stir in basil. Cook for another 5 minutes.
