2 Smart Ones® Santa Fe Style Rice & Beans meals
6 oz. boneless, skinless, chicken breasts
1 tsp canola oil
3 oz turkey smoked sausage, diced
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 C celery, diced
1 clove garlic, diced
1 tomato, diced and seeded
1/2 tsp thyme
1/2 tsp cayenne pepper
1 Tbsp Worcestershire sauce
1 tsp hot sauce
black pepper to taste
Separately microwave each Smart Ones® Santa Fe Style Rice & Beans according to package instructions. Set aside.
Clean chicken of any excess fat and dice into 1 inch pieces.
Heat skillet on medium heat and add oil.
Add chicken to skillet and sauté until internal temperature has reached 165 F degrees, about 6 to 8 minutes. Set aside.
Add turkey smoked sausage to skillet and lightly brown over medium heat, about 3 to 4 minutes. Set aside.
Add onions, bell peppers, and celery to skillet. Brown over medium heat for 2 to 3 minutes. If pan is dry, add cooking spray to help vegetables cook evenly.
Add garlic and sauté for an additional 30 seconds. Add tomato skillet and continue to sauté for an additional 2 to 3 minutes.
Add thyme, cayenne pepper, Worcestershire sauce, hot sauce, and black pepper.
Add chicken, sausage, and Smart Ones® Santa Fe Style Rice & Beans meals. Mix thoroughly.
Stirring occasionally, cook an additional 2 to 3 minutes or until all components are evenly heated.
