Dark's Kitchen
Ingredients:
Serves 6, 1/6 total dish per serving

1 lb extra lean ground beef
1/2 C onion, chopped
1/4 C canned jalapeno slices, chopped
2 C tomatoes, chopped, or 1 15 oz. can diced tomatoes
1 15 oz. can whole kernel corn, drained
1 15 oz. can black beans, rinsed and drained
1 1 1/4 oz. pkg taco seasoning mix, see my homemade taco seasoning in Misc recipes
8 corn tortillas
3/4 C non-fat sour cream
1/3 C reduced-fat Mexican cheese blend, shredded
1/3 C fresh cilantro, chopped, or to taste, garnish, optional

Directions:

Preheat oven to 350 F degrees.

Brown ground beef and chopped onions in large skillet. Drain well and rinse with warm water to remove all fat.

Return beef/onions to skillet. Add corn, black beans, tomatoes, jalapenos, and taco seasoning. Mix well.

Reduce heat and simmer for 5 minutes.

Spray a 9x13 baking dish with non-stick cooking spray. Cut each tortilla in half. Place 8 halves in the bottom of baking dish, overlapping slightly.

Spoon half of beef mixture evenly over tortillas.

Spoon sour cream evenly over beef mixture.

Top with remaining tortilla halves and remaining beef mixture.

Bake for 25 minutes.

Remove from oven and sprinkle with cheese. Cover and let stand for 5 minutes, or until cheese is melted. Sprinkle with chopped cilantro and serve.
