Ingredients:
Servings 1

1 tsp Dijon mustard
2 tsp white balsamic vinegar
1/2 tsp herbes de provence mix
Salt and pepper to taste
4 asparagus, whole or bias cut
2 scallions, thinly sliced
1 small yellow tomato, cut into wedges
1 small golden beet, boiled, peeled, and cut into thin wedges
1 small Belgian endive, thinly sliced
Few Italian parsley leaves
1 Tbsp minced chives

Directions:

Combine mustard, vinegar, and herbes, with salt and pepper to taste.

Combine remaining ingredients in a medium bowl and toss well.
