Serves 4, 1/4 total dish per serving
1 1/4 lbs boneless chicken, breast or thighs
1 Tbsp minced onion flakes
1/4 C soy sauce
2 tsp honey
1 dash garlic powder
1/2 C green pepper, chopped
2 1/2 C mushrooms, sliced
Preheat oven to 350 F degrees.
Place chicken in an 8x8 baking dish.
Sprinkle with onion flakes.
In a small bowl, combine soy sauce, honey, and garlic powder.
Pour mixture evenly over chicken.
Cover and bake for 30 minutes.
After 30 minutes, spread green peppers and mushrooms evenly over chicken.
Bake, covered, for an addition 20 minutes, or until mushrooms are tender.
