Servings 2, 1/2 pepper per serving
1 9 oz. Smart Ones® Pulled Pork & Black Beans entrée
1/2 C cooked white rice
1 large red bell or poblano pepper
1 C shredded carrots, cabbage, or Cole slaw mix
1 Tbsp light mayonnaise
1 Tbsp white vinegar
1/4 tsp dill seeds
2 Tbsp water
Preheat oven to 375 F degrees.
Prepare Smart Ones® Pulled Pork & Black Beans according to package directions.
Stir in rice.
Cut pepper in half, remove stem and seeds, and place in a shallow pan.
Fill pepper halves with pork mixture. Add water to pan.
Cover with foil and bake for 30 minutes.
Uncover and bake for 15 minutes or until the pepper is soft.
Top pepper halves with shredded carrots, cabbage, or Cole slaw.
