Serves 12, 1 cupcake per serving

2 Smart Ones® Strawberry Shortcake Desserts
3/4 C French vanilla cake mix
1/2 C diet cream soda or strawberry soda
2 large egg whites, beaten until stiff peaks form
9 Tbsp whipped topping, fat free
4 Tbsp cream cheese, fat free
1/2 Tbsp zero calorie sweetener
1/4 pint fresh strawberries, diced to 1/4 inch pieces, or about 1/2 C
2 fresh kiwi, peeled, diced to 1/4 inch pieces, or about 1/2 C


Preheat oven to 350 F degrees. Line a cupcake pan with liners.

Microwave Smart Ones® Strawberry Shortcake Desserts on high for 20 seconds to completely thaw.

Using a spoon, remove strawberry and cream topping from cake, and reserve in a separate mixing bowl.

In a large mixing bowl, using a fork, mix cake portion of Smart Ones® Strawberry Shortcake Desserts with French vanilla cake mix until the two ingredients are well incorporated. Add diet cream, or strawberry soda, and whisk until batter is smooth.

Using a rubber spatula, fold in whipped egg whites until mixture is uniform.

Fill each cup 3/4 of the way with batter.

Bake for 11 to 12 minutes or until a toothpick, inserted in center, come out clean. Allow to cool.

Using a whisk or hand blender, mix whipped topping, cream cheese, and sweetener with the reserved strawberry and cream topping.

Once cupcakes have cooled, top with 1 Tbsp of strawberry cream cheese topping, diced strawberries, and diced kiwi.
