2 lbs lean ground chicken
3/4 C regular Panko Bread Crumbs
2/3 C minced onion
2 eggs, beaten
1/4 C milk
1/2 tsp salt
1/4 tsp pepper
4 Tbsp cornstarch
1 C packed brown sugar
2 14 oz. cans pineapple chunks - drained, with juice reserved
2/3 C white vinegar
3 Tbsp soy sauce
1 red and 1 green pepper, cut into chunks
In a large bowl, combine ground chicken, Panko crumbs, onion, egg, milk, and salt.
Shape mixture into meatball size portions of your choice.
Spray a foil lined cookie sheet with cooking spray.
Bake meatballs at 350 for 20 to 30 minutes depending on their size…turning half way through.
In a bowl, combine cornstarch, brown sugar, reserved pineapple juice, vinegar, and soy sauce.
Mix until smooth. Pour into a skillet. Cook on low until sauce starts to thicken.
Add meatballs. Stir in peppers and pineapple chunks. Heat through.
